Over the weekend I was having crazy cravings for fatty food. 🐷😝🐷 In an effort to avoid bags and bags of potato chips (my weakness) I searched for a healthier option and found a delicious recipe from @stupideasypaleo for Paleo Baked Avocado Fries! These are a must try! Essentially you coat avocado slices with @epicbar pork rinds and OMG amazing! #cravings #healthyfats
In all honesty this first week back to school has kicked my bootie! Two new schools, after school Spanish program, gymnastics and one open house. It has been busy! Not to mention trying to find the right person to watch the little in the afternoons so I can focus on my career. I did however manage to make a few delicious healthy meals for the fam despite the chaos. This one we made Monday night (yes it's taken me that long to post 🤦🏼♀️). Coconut Chicken Curry from @paleoflourish. It was amazing. I actually ate it for lunch and dinner the next day too 😁. I did deviate from the recipe a little as I didn't have the correct amount of some of the ingredients but it was still fab! Highly recommend checking out this recipe. My kiddos loved it too!
So proud of these two today... both started new schools today and no tears were shed (except mine). Madison is off to first grade (how did that happen?!?!) and Harper is starting a bilingual preschool! I guess it really is time for me to go back to work. Adios summer! #firstdayofschool
Last night before going to sleep Madison and I snuggled in bed and worked on her first gratitude entry in her journal. She had to come up with three highlights/things she was thankful for from the day. This summer has been a lot of adjustments from moving out of our home in Seattle, leaving friends, relocating across state, etc... the summer has been full of fun with family but we've also had some pretty low moments. Last week while on vacation at the happiest place on earth (Disneyland) and hearing lots of negativity I decided it was time to breakout a gratitude journal to change our mindsets. It was a fun experience to do with her. I was surprised by some of the things she mentioned from the day. I think this journaling will not only help her focus on the positive but also help us continue to bond as I felt like I learned so much about her in that short uninterrupted time period. #fullheart #feelinggrateful

Simple dinner tonight: lemon chicken tenders, roasted carrots and collard greens. Collard greens are my kids new favorite vegetable. We've been eating these greens a few days a week. Anyone have any good recipes to cook them? We've just been sautéing them with garlic, salt and pepper.
I meant to post this earlier but you know life happened... kids, food, diapers, all that jazz... 😝 These pancakes are an easy, healthy back to school breakfast and only TWO ingredients. And an added bonus they taste great. You need one banana and two eggs. Smash the banana in a bowl, mix in the eggs well and then cook for one minute on each side. I make them smaller as they are easier to flip. Add butter, maple syrup, fruit, etc and enjoy! 😋 #breakfast #paleobreakfast #backtoschool
