One of my favorite lunches are #quinoabowls . I'm pretty much the only one in my house that eats it so when I make it for dinner, there is always leftovers. I just throw in some veggies and dressing and it's ready to go! I usually go for #Mediterranean or #italian flavors when it comes to this supergrain. Here, I added green pepper, onion, cherry tomatoes, marinated artichoke hearts, feta cheese, and a squeeze of fresh lemon with some olive oil.
